MISO MAC & CHEESE

Ingredients

  • 10 oz. Macaroni
  • ¼ Cup Butter
  • ¾ Cup Flour
  • 3 ¾ Cup Milk
  • 4 Tablespoons Marukome Miso
  • 1 Egg Yolk
  • 1 ¼ Cup Gruyere Cheese, grated
  • 4 Tablespoons Chives

Directions

  • 01 Preheat oven to 350ºF
  • 02 Cook the pasta al dente according package instructions.
  • 03 Melt butter on low heat in a small pot. When it starts foaming, add flour and cook for one minute until it begins to bubble, stirring constantly.
  • 04 Remove from heat and slowly add milk while stirring. Stir on low heat until the mixture begins to thicken.
  • 05 Remove from heat, add the miso and egg yolk and stir.
  • 06 Let the mixture sit for 5 minutes, then add 1 cup grated cheese and chives and stir until cheese has melted.
  • 07 Add the cheese mixture to pasta and stir well.
  • 08 Butter the sides of a baking dish, add the pasta and remaining cheese on top.
  • 09 Bake in the oven for 35 minutes until the top is golden brown.
