MISO MARINATED BEEF

Grilling With Miso

  • Grill your beef sirloin to perfection with a miso marinade that will add subtle flavors of ginger, garlic, and chili pepper while drawing out the naturally balanced steak flavors.

Ingredients

  • 1 pkg. Marukome Miso
  • 1.8 oz. ginger
  • 3 Tbsp. soy sauce
  • 2/3 cup nikiri sake (sake heated to burn off alcohol)
  • 1.8 oz. garlic
  • 7.5 oz. sugar
  • 1/2 cup sesame oil
  • 1 1/2 cup vegetable oil
  • Ichimi chili pepper
  • 4 cheese cloths(size of cloths is just enough to cover beef)
  • Directions

    • 01 Blend Miso, ginger, soy sauce, sake and garlic in a blender. Transfer into a pot and add all remaining ingredients except beef sirloin.
    • 02 Bring to a boil, then immediately turn off heat. Set aside until mixture cools.
    • 03 Spread half the mixture in a container. Lay 2 pieces of cheese cloth on top (to make a double layer of cloth). Place beef on cloth and lay 2 remaining cloths over beef. Spread remaining mixture on cloth.
    • 04 Cover container with plastic wrap and marinate for 3 hours in refrigerator.
    • 05 Grill marinated beef over charcoal or electric indoor grill. Recipe Tip: The cheese cloth makes it very convenient for removing all excess marinade mixture from the meat. This prevents meat burning from the heat while cooking.
