SWEET POTATO MISO SOUP

Miso enhances the sweetness of sweet potatoes.

Ingredients (yields 4 servings)

  • 1 sweet potato (15 oz)
  • 1/2 onion (5 oz)
  • 2 cups water
  • 1 tablespoon unsalted butter
  • 1/2 cup heavy cream
  • 1 tablespoon miso paste
  • salt and pepper to taste

Directions

  • 01 Thoroughly wash the sweet potato, slice and soak in water. Slice the onions as well.
  • 02 Place the butter in a pot, put on medium heat, add onions and sweet potato in this order, and stir-fry.
  • 03 When the vegetables are tender, add water and simmer for 20 minutes on low heat.
  • 04 Turn off the heat and add miso paste. Using a hand mixer, turn the soup into a paste and add heavy cream, salt and pepper and cook on low heat. Turn off the heat just before the pot boils.
